What Is Structured Water? How It Works & How to Make It

Posted by eWater.com on Oct 22nd 2026

You can drink water all day and still feel dry, tired and foggy. That is why more people are asking whether the amount of water is the whole story, or whether the water itself matters too. Structured water is the idea that it does: that water can be organized in a more ordered way, and that the order changes how it behaves. This guide explains what structured water is, where the idea comes from, what the research shows and what is still debated, and how to make it at home.

What Is Structured Water?

Structured water is water whose molecules line up in an ordered, layered pattern instead of moving around at random. You will also hear it called EZ water, hexagonal water or the "fourth phase" of water, a phase somewhere between liquid water and ice.

The idea gained real attention from the laboratory of Dr. Gerald Pollack at the University of Washington. His team found that right next to water-loving surfaces, water forms a distinct zone that pushes particles and dissolved substances away. They named it the exclusion zone, or EZ. Water inside that zone behaves differently from the water around it: it is more ordered, and it carries an electrical charge, with the opposite charge in the water just beyond it.

Their published work also found that light expands this zone. In a 2009 study in the Journal of Physical Chemistry B, radiant energy, infrared light in particular, made the ordered zone grow, and it shrank back when the light was removed.

How Does Water Become Structured?

Nature structures water all the time. In the lab, the ordered layer forms wherever water touches a water-loving surface, and light feeds it. Outside the lab, people point to the way water moves and lives in nature:

  • Movement. Mountain streams spiral, tumble and swirl over rock. Vortexing, or swirling water in a spiral, is the most common way people try to copy that at home.
  • Minerals. Spring water picks up minerals as it travels through stone.
  • Sunlight. Light, and infrared in particular, is the one factor the lab work measured directly.

Tap and bottled water usually get none of this. They sit still in pipes, tanks and plastic, which is why so many people look for a way to bring the structure back.

Is Structured Water Real?

The ordered layer itself is a published, repeated laboratory observation. What is still debated is how far that order reaches, what exactly causes it, and what it means for the water you drink. Some chemists argue the effect has a simpler explanation, and large human studies on drinking structured water have not been done yet.

So the honest answer is this: structured water is a real area of research with open questions, and the people who drink it daily judge it the way they judge any water, by how they feel. That is also why the quality of the water you start with matters so much.

Structured Water vs. Hexagonal, Alkaline and Distilled Water

  • Hexagonal water is another name for structured water. It refers to the six-sided, honeycomb-like pattern the ordered layer is described as having.
  • Alkaline water is about pH, how acidic or basic the water is. Structure is about how the molecules are organized. Water can be one without being the other.
  • Distilled and reverse osmosis water are about purity: what has been taken out. They make an excellent clean starting point for structuring, because there is less in the water to get in the way.

How to Make Structured Water at Home

Start with clean water. Purified water, preferably reverse osmosis, gives you the best base, because structuring adds to the water and does not remove anything from it.

The simplest home methods copy what nature does:

  1. Swirl it. Stir your water in a spiral, or pour it back and forth, to create a vortex.
  2. Give it light. Keep water in clear glass rather than plastic, and let it sit in natural light.
  3. Keep it moving and fresh. Water that sits still for days in plastic is the opposite of a mountain stream.

These are easy and free, but they are hard to do consistently every day. If you want structured water without thinking about it, there are two simple ways to have it on hand.

Better hydration that goes wherever you go. The Travel Quanta Water Jug structures your water for better hydration while helping rebuild your adrenal function. Fill it with purified water at home, at work or on the road, and every glass is ready.

Extremely hydrating, highly oxygenated water at home. The Vitalizer Plus sits on your counter and turns purified water into extremely hydrating, highly oxygenated water at the press of a button. It is made for people who drink water all day and still never feel quite hydrated.

Frequently Asked Questions

Is structured water safe to drink?

Yes. Structured water is still just water. The safety of what you drink depends on the water you start with, which is why purified water is the best base.

Can you make your own structured water?

Yes. Swirling water into a vortex, keeping it in glass and giving it natural light are the most common home methods. A jug or machine made for it does the same job consistently, every day.

How much structured water should I drink?

The same amount you would drink of any water. Our guide on how much water you should drink a day gives you the numbers for men and women, in cups and litres.

Is structured water the same as alkaline water?

No. Alkaline water is about pH. Structured water is about how the molecules are arranged.
